Minha quitanda mineira preferida é broinha de fubá de canjica. Esse ingrediente precioso parece ser encontrado apenas por estas bandas, infelizmente. Se um dia der a sorte de se deparar com esse fubá, compre e corra pra cozinha!
O fubá de canjica é extraído de milho duro e seco resultando num pó muito fino e rico em amido. O que o distingue do fubá mimoso é a granulometria e o tipo de moinho usado para produzi-lo.
Esta é a nona receita do nosso especial de Festa Junina!! Nos posts anteriores você confere Quentão, Paçoca de amendoim, Amendoim Praliné, Pé-de-moça, Canjica doce, Pipoca doce caramelada perfeita, Bolo de bagaço de milho e Curau de milho.
Ingredientes
- 5 ovos
- 1/2 xícara (chá) de óleo
- 1 xícara (chá) de leite frio integral
- 1/4 de xícara (chá) de açúcar
- 1/2 colher (chá) de sal
- 2 xícaras (chá) de fubá de canjica
- 2 colheres (chá) de grãos de erva-doce
Modo de preparo
Ligue o forno na temperatura de 250 graus e deixe aquecendo enquanto prepara a massa. Unte com manteiga e polvilhe com fubá uma assadeira grande ou duas médias. Reserve.
Faça a massa: coloque no liquidificador os ovos, o óleo, o leite, o açúcar, o sal e cerca de um quarto do fubá. Bata bem até ficar uma massa lisa. Despeje tudo numa tigela e junte o restante do fubá e a erva-doce. Misture bem até formar uma massa cremosa, mas não líquida. Se precisar, adicione mais fubá (por aqui foi mais uma xícara inteira).
Passe óleo numa xícara de chá de fundo arredondado e coloque aí um pouco de fubá. Retire porções de massa usando duas colheres de sobremesa (uma para pegar, outra pra empurrar). Jogue a porção de massa dentro da xícara, rodeie para moldar a bolinha e vire sobre a assadeira preparada. Faça isto com toda a massa, deixando espaço entre as broinhas, que vão crescer. Se achar complicado, coloque as colheradas de massa direto na forma e polvilhe fubá por cima das broinhas antes de assar.
Leve ao forno preaquecido e asse até ficar bem dourada (no meu levou meia hora). Essa broinha costuma ficar oca por dentro… Quem sabe na próxima fornada?
