Vaca atolada você conhece, mas e linguiça atolada? É tão deliciosa quanto, e fica uma delícia para comer com arroz e uma couve refogadinha, ou para servir em uma tigela na Festa Junina!
Ingredientes
1 kg de linguiça fresca
100 g de bacon em cubinhos e/ou linguiça calabresa em rodelas (usei linguiça calabresa)
1 cebola grande picadinha
5 dentes de alho picadinhos
½ xícara (chá) de cachaça
3 tomates sem sementes picados em cubinhos
3 folhas de louro
1 colher (chá) de páprica doce
½ colher (chá) de páprica defumada
pimenta-do-reino e tempero de alho e sal (a gosto)
700 g de mandioca picada em pedaços médios, pré-cozida por 5 a 7 minutos (não descarte a água em que cozinhou a mandioca)
Salsinha e cebolinha picada a gosto
Modo de preparo
Leve uma panela ao fogo com água e, quando ferver, acrescente a linguiça fresca, deixando cozinhar por 10 minutos. Desligue o fogo, escorra, pique em rodelas e reserve.
Aqueça uma panela grande no fogo médio, junte a calabresa e um fio de azeite, fritando até dourar. Retire com uma escumadeira e reserve.
Na mesma panela em que fritou a calabresa, mantendo a gordurinha que ela soltou, junte a linguiça e frite até dourar. Adicione a cebola e o alho, misture por 2 minutos, coloque a cachaça e refogue por mais 2 minutos para absorver o sabor e o álcool evaporar.
Acrescente o tomate, as folhas de louro, as pápricas doce e defumada, e tempere a gosto com pimenta-do-reino e tempero de alho e sal. Misture bem.
Junte a calabresa reservada e a mandioca pré-cozida junto com a água do seu cozimento. Se necessário, acrescente mais água até cobrir a linguiça e a mandioca.
Cozinhe por 30 minutos a 1 hora em fogo baixo, até o caldo engrossar. Salpique cebolinha e salsinha e sirva.
