Ela fica saborosa, macia e acompanha deliciosamente bem queijos, pães, sanduíches, saladas, grelhados, além de ser muito fácil de fazer.

Ingredientes
- 1 kg de tomates bem maduros e vermelhos, sem pele e sem sementes, em cubos médios, uns 7 tomates, ou 1 lata de 400g de tomate pelatti (eu usei o pelatti já em cubos pra facilitar a vida)
- 2 ramos de salsinha
- 2 ramos de manjericão
- 3 ramos de tomilho
- 1/4 de xícara de mel (50 g)
- 2 colheres (sopa) de vinagre balsâmico
- Sal
Modo de preparo
Coloque o tomate e uma pitada de sal numa panela média e que acomode tudo bem junto, tampe e aqueça. Quando soltar um caldinho e ferver, destampe e deixe em fogo baixo até começar a amolecer. Se for usar tomate pelatti como eu, só aquecer por 1 minuto e seguir com a receita.
Amarre as ervas pra facilitar na hora de descartar e coloque na panela do tomate. Junte o mel e vinagre e deixe no fogo por mais uns 30 minutos, até reduzir a aproximadamente 1 xícara de chá de uma pasta macia e consistente.
Descarte as ervas e ajuste o sal, pois a compota é adocicada, mas não é sobremesa.
Deixe esfriar e guarde num pote fechado por até uma semana na geladeira.
O agridoce da compota combina demais com carnes assadas, grelhados, queijos e defumados.
Rende 1 xícara de chá (250 ml).
