24 de maio é o Dia Nacional do Milho! Originário do sul do México e da Guatemala, viajou pelas Américas com a ajuda dos povos ancestrais. Estima-se que os primeiros milhos chegaram na Amazônia há 4 mil anos, e de lá para o restante do Brasil!
Aqui em Minas Gerais temos pratos tradicionais feitos com este ingrediente: angu, canjica, bolo de fubá e canjiquinha (quirera) são apenas alguns deles.
Vamos celebrar esse alimento maravilhoso com receitas pra mostrar sua versatilidade. Vai ter doce e salgado para agradar todos os gostos.
A farinha de milho é feita com os grãos de milho sem o gérmen. Empresta cor e sabor a pães, bolos, sopas, farofas. No norte e nordeste, costuma ser consumida de modo bem simples: cozida com sal e leite de coco.
Outro tipo de farinha, o fubá é produzido a partir dos grãos de milho crus moídos. É ele o responsável por duas maravilhas para acompanhar o cafezinho: bolo de fubá e broinha de fubá.
Já a sêmola de milho é a base para preparar uma bela polenta cremosa. Esse ingrediente é a farinha de milho moída com textura mais grossa.
Existe a sêmola pré-cozida (ou fubá pré-cozido), o que adianta bastante uma etapa do cozimento, mas o sabor não vai ser o mesmo.
Já a farinha de milho flocada é perfeita para preparar farofas. Fica crocante, com a textura certa.
Tem também o fubá mimoso. Além desse nome simpático, ele tem textura mais fininha, o que faz dele ideal para o preparo de massas de bolos e broas.
E o fubá de canjica, que só encontro aqui pelas Gerais, é extraído de milho duro e seco resultando num pó muito fino e rico em amido, quase uma maisena. O que o distingue do fubá mimoso é a granulometria e o tipo de moinho usado para produzi-lo. Ele é o ingrediente principal da minha quitanda preferida, a broinha de canjica.
