- O leite deve estar na mesma temperatura da batata, esse é um dos segredos para o purê não empelotar.

Ingredientes
6 batatas (cerca de 1,5 kg)
1 e ½ xícara (chá) de leite
3 colheres (sopa) de manteiga gelada
noz-moscada ralada na hora a gosto
sal a gosto
Modo de preparo
Lave, descasque e corte as batatas em pedaços médios. Transfira para uma panela, cubra com água e junte 1 colher (chá) de sal.
Leve para cozinhar em fogo alto. Assim que começar a ferver, abaixe o fogo e deixe cozinhar por 20 minutos, ou até ficarem macias – espete com um garfo para verificar.
Enquanto isso, coloque o leite numa panela pequena e leve ao fogo baixo para aquecer – não é preciso ferver.
Escorra bem a água das batatas e passe os pedaços ainda quentes pelo espremedor, voltando para a mesma panela.
Leve ao fogo médio e acrescente o leite, aos poucos, mexendo com um batedor de arame para incorporar.
Tempere com sal e noz-moscada. Desligue o fogo e misture a manteiga gelada até que ela seja incorporada completamente. Sirva a seguir.
