Já pensou em fazer uma salada com melancia? Essa receita com pepino, queijo e hortelã é refrescante, leve, além de linda!
Usei o especialíssimo queijo Manoel, feito artesanalmente com leite cru na fazenda Cruzeiro, localizada no cerrado de Minas Gerais, e maturado pelo meu tio João Bello, do @queijobello. Tem sabor delicado e um aroma suave maravilhoso!
Mas se você não o tiver à mão como eu, pode substituir por ricota, queijo de cabra, cottage, pelo italiano pecorino ou o grego feta.
Ingredientes
- 1 melancia pequena ou 1/8 de melancia grande
- 1 pepino
- 1 xícara de chá de queijo em cubos
- Azeite de oliva extravirgem a gosto
- Sal e pimenta do reino a gosto
- Folhas de hortelã para finalizar
Modo de preparo
Corte a melancia em cubos retirando os caroços.
Descasque o pepino e corte em cubos pequenos, disponha-os em uma peneira e polvilhe um pouco de sal. Deixe escorrer a água por cerca de 15 minutos. Retire os cubos da peneira e enxague.
Em um prato, disponha os cubos de melancia e pepino, cubos de queijo e finalize com folhas de hortelã. Tempere com sal e pimenta do reino e regue tudo com azeite extravirgem.
Serve 6 pessoas.
