Salada mexicana

Não fico sem meu feijãozinho, e neste calor, salada é uma ótima solução para continuar se deliciando com ele, mas de uma forma refrescante!!

O destaque dessa salada mexicana de feijão roxinho, uma adaptação do chili tradicional, é o molho, cheio de sabor e levemente apimentado…

A receita foi adaptada do excelente livro “Saladas Celeiro”, que traz as delícias servidas no restaurante carioca de mesmo nome, ícone da culinária saudável no Rio de Janeiro há anos.

Ingredientes

Molho

  • 1 e ½ colher (sopa) de vinagre de vinho branco
  • 1 e ½ colher (sopa) de azeite de oliva extravirgem
  • 1 e ½ colher (sopa) de óleo de girassol ou de milho
  • 1 colher (chá) de cominho em pó
  • ½ colher (chá) de chili em pó ou páprica picante
  • 1 dente de alho grande ralado
  • 1 colher (chá) de orégano seco
  • 2 colheres (sopa) de manjericão fresco picado
  • 3 colheres (sopa) de molho de tomate
  • 1 colher (chá) de sal

Salada

  • 500 g de feijão roxo ou carioca cozido (ou 250 g do roxo e 250 g do branco)
  • 1 lata de milho verde em conserva
  • 1 cebola roxa pequena cortada em cubinhos pequenos
  • 1/3 de xícara (chá) de folhas de coentro ou salsinha picada

Modo de preparo

Em uma tigela grande, junte todos os ingredientes do molho e misture bem com um batedor de arame (fouet).

Junte o feijão, o milho e a cebola, envolvendo-os bem com o molho. Deixe descansar em uma vasilha tampada por 30 minutos na geladeira, para pegar gosto.

Salpique com o coentro ou a salsinha na hora de servir. Dura 3 dias na geladeira.

Rende 6 porções.
