Ingredientes únicos e tradições gastronômicas específicas são motivo de orgulho em cada região da França. Na Bretanha, onde fica Nantes, cidade em que moro, não poderia ser diferente. Com uma forte ligação com o mar, é uma das regiões mais antigas do país, com raízes que remontam aos tempos celtas.
Reverenciada por gastrônomos do mundo todo, a fleur de sel (flor de sal), o “ouro branco da Bretanha”, é produzida nas salinas de Guérande, que possui fontes de extração de sal desde a Idade do Ferro (1200 a.C.). Os delicados cristais são cuidadosamente coletados da superfície da água do mar, de forma artesanal.
A flor de sal é utilizada na finalização de pratos doces e salgados, potencializando seu sabor, e traz um toque especial ao caramelo salgado. Especialidade bretã, a receita ganhou fama na década de 1970, quando o chef Henri Le Roux criou um doce de caramelo com manteiga salgada e avelã, premiado como o melhor da França. A partir daí, o caramelo salgado ganhou o mundo, incluindo o Brasil.
A crêpe de caramel au beurre salé (crepe de caramelo salgado) é uma das receitas preferidas da minha família. Compartilho seu passo a passo para que você possa se deliciar também.
Para o caramelo:
200g de açúcar
300ml de creme de leite fresco
130g de manteiga com sal
1 pitada de flor de sal
Para a crepe:
250g de farinha de trigo
1 pitada de sal
3 ovos
50g de manteiga derretida
500ml de leite
Comece pelo caramelo. Esquente o açúcar em uma panela pequena, até que ele derreta e caramelize. Retire do fogo e adicione o creme de leite, a manteiga e a flor de sal. Misture até conseguir um molho liso e cremoso.
Para fazer a crepe, misture farinha e sal em uma tigela. Faça um buraco no meio e junte os ovos e a manteiga. Misture com um fouet e vá adicionando o leite aos poucos, até a mistura ficar homogênea. Deixe descansar por 1 hora. Cozinhe as crepes em uma frigideira untada com manteiga e sirva com o caramelo salgado.
