Ingredientes
- 2 filés de peito de frango (400 g)
- 1 cebola-roxa
- 2 dentes de alho
- 1 pimentão
- 1 xícara (chá) de tomate-cereja ou sweet grape
- 1 xícara (chá) de arroz
- ½ xícara (chá) de vinho tinto
- 1 e ½ xícara (chá) de água
- 2 colheres (sopa) de extrato de tomate
- ½ colher (chá) de cominho
- 1 colher (chá) de páprica doce
- ½ colher (chá) de páprica defumada
- 1 folha de louro
- azeite a gosto
- sal e pimenta-do-reino moída na hora a gosto
- salsinha picada para finalizar
Modo de preparo
Corte o frango em cubos de 2 cm. Pique fino a cebola e o alho. Corte o pimentão em tiras de 1 cm e as tiras em cubos e corte os tomates ao meio.
Tempere os cubos de frango com ½ colher (chá) de sal. Leve uma chaleira com a água ao fogo para ferver.
Leve uma panela média ao fogo. Quando aquecer, regue com ½ colher (sopa) de azeite e acrescente metade dos cubos de frango. Quando estiverem dourados, transfira para uma tigela, adicione ½ colher (sopa) de azeite na panela e repita com o restante do frango. Transfira para a tigela e reserve.
Mantenha a panela em fogo médio, regue com 1 colher (sopa) de azeite, acrescente a cebola, tempere com uma pitada de sal e refogue até murchar. Junte o alho, o extrato de tomate e refogue por 1 min.
Abaixe o fogo, adicione 1 colher (sopa) de azeite e junte o arroz. Tempere com as pápricas, o cominho, ½ colher (chá) de sal e pimenta a gosto. Junte o louro e mexa por 1 min.
Regue com o vinho e misture bem. Acrescente a água fervente e misture o frango ao arroz. Mantenha a panela em fogo médio com a tampa entreaberta até a água atingir o nível do arroz.
Abaixe o fogo e adicione os tomates e o pimentão, sem misturar. Mantenha a panela em fogo baixo com a tampa entreaberta até a água secar completamente – para verificar, espete um garfo e afaste os grãos de arroz do fundo da panela.
Desligue o fogo e deixe a panela tampada por 5 min. Regue os legumes com um fio de azeite, tempere com sal e pimenta e finalize com salsinha picada.
