Estrogonofe para a família

Melhor estrogonofe da vida define… Carne macia, molho cremoso e ultra saboroso e ainda tem os cogumelos frescos que em nada lembram o sabor daqueles em conserva. Como o prato é perfeito pra reunir a família no domingo, a receita é para 10 pessoas. Se sobrar, o estrogonofe pode virar o molho do macarrão no jantar ou mesmo o recheio daquela batata assada maravilhosa.

Ingredientes

  • 1,5 kg de miolo de alcatra ou filé em tirinhas finas
  • 4 colheres (sopa) de manteiga
  • 2 cebolas médias picadas
  • 1 colher (chá) de açúcar
  • 3 dentes de alho picadinhos
  • 3 colheres (sopa) de conhaque ou whisky
  • ¼ de xícara (chá) de farinha de trigo
  • 3 colheres (sopa) de ketchup
  • 2 colheres (sopa) de mostarda
  • 3 colheres (sopa) de molho inglês
  • 1 colher (sopa) de páprica doce
  • 400 g de cogumelos-de-paris em fatias finas
  • 3 xícaras (chá) de creme de leite fresco (cerca de 750 ml)
  • sal e pimenta-do-reino moída na hora a gosto

Modo de preparo

Leve ao fogo médio uma panela grande. Quando aquecer, regue com 1 colher (sopa) de manteiga e doure as tiras de carne em 3 levas – se colocar todas ao mesmo tempo, elas vão soltar o próprio líquido e cozinhar no vapor, em vez de dourar. Transfira as tiras douradas para uma tigela. Doure o restante, sempre juntando mais uma colher de manteiga antes de cada leva.

Diminua o fogo para baixo e regue com mais 1 colher de manteiga. Adicione a cebola e o açúcar e refogue até murchar (cerca de 3 min), raspando o fundo da panela – os queimadinhos da carne vão dar sabor. Junte o alho e mexa por 1 min para perfumar. Adicione o conhaque e deixe ferver por 1 min.

Volte a carne à panela e acrescente a farinha. Mexa por 2 min (a farinha vai ajudar a engrossar o molho). Acrescente o ketchup, a mostarda, o molho inglês e a páprica e mexa bem. Junte os cogumelos e misture delicadamente. Acrescente 1 xícara (chá) de água e misture. Cozinhe em fogo médio por 5 min.

Regue com o creme de leite, tempere com sal e pimenta a gosto. Depois que começar a ferver, cozinhe por mais 15 min, mexendo de vez em quando, até o molho engrossar. Desligue o fogo e sirva com arroz branco e batata palha.

Serve de 8 a 10 pessoas.
