Tomatinho confitado é uma receita muito fácil e versátil. Fica ótimo para servir com pão, queijos, acompanha bem carnes assadas e fica delicioso com uma massa.
A técnica de confitar consiste em cozinhar em gordura, em baixa temperatura e por um longo período de tempo. Como eu usei o tomate sweet grape pequeno, partido ao meio, o tempo é mais curto nesse caso.
O preparo é simples, basta untar com azeite uma travessa refratária, dispor os tomates previamente lavados, secos e partidos ao meio com a parte partida voltada para cima. Espalhe alguns dentes de alho entre os tomates. Depois, é só temperar com sal, açúcar para quebrar a acidez, ervas secas da sua preferência e cobrir tudo com bastante azeite.
Leve ao forno preaquecido a 150°C ou 160°C por 45 minutos. Sirva em seguida ou guarde em um vidro na geladeira.
