Ingredientes
- 2 ovos
- 1 xícara (chá) de leite
- 2 colheres (sopa) de óleo
- 1 xícara (chá) de fubá mimoso
- ½ xícara (chá) de farinha de trigo
- 4 colheres (sopa) de açúcar
- ½ colher (chá) de baunilha
- 1 colher (chá) de fermento
- sementes de erva-doce (opcional)
Modo de preparo
Coloque no copo do liquidificador ovos, leite, óleo, fubá, farinha, açúcar e baunilha. Bata até a mistura ficar homogênea. Junte o fermento e bata mais um pouco somente para incorporar. Se desejar, acrescente as sementes de erva-doce e misture levemente.
Leve uma frigideira grande antiaderente ao fogo médio. Quando aquecer, regue com um fio de óleo ou um pouco de manteiga. Usando uma concha ou uma colher grande, adicione cerca de ¼ de xícara (60 ml) da mistura à panela para cada panqueca (você pode cozinhar 3 a 4 de cada vez, apenas deixe espaço suficiente para virar. Grelhe por 2 a 3 minutos de cada lado ou até que estejam inchadas, douradas e cozidas. Passe para um prato e repita os mesmos procedimentos acima até a massa terminar.
Sirva com mel e uma pitada de canela.
