Ingredientes
- 4 colheres (sopa) de azeite
- 2 berinjelas com casca, lavadas e secas, e cortadas em cubos de 2 cm
- sal
- 1 cebola pequena cortada na metade e fatiada em meias-luas finas
- ½ pimentão vermelho sem sementes, fatiado em tiras finas
- 3 dentes de alho picadinhos
- 1 colher (chá) de cominho em pó
- ½ colher (chá) de canela em pó
- 1 colher (chá) de páprica doce
- ½ xícara (chá) de uva passa branca
- 400g (1 lata) de tomate pelado picado
- 3 colheres (sopa) de vinagre de vinho tinto (usei balsâmico)
- 2 colheres (chá) de açúcar
- 2 colheres (sopa) de mel
Modo de preparo
Em uma panela ou frigideira média, aqueça o azeite em fogo médio. Adicione as berinjelas e refogue até dourar. Tempere com sal e reserve.
Volte a panela ao fogo baixo, adicione a cebola e refogue até dourar. Junte o pimentão e cozinhe por mais 5 minutos. Coloque o alho, o cominho, a canela e a páprica e refogue por 1 minuto. Junte a uva passa, uma pitada de sal e o tomate. Cozinhe por mais 5 minutos, acrescente o vinagre, o açúcar e o mel e misture bem.
Adicione a berinjela previamente refogada e cozinhe por 8 minutos em fogo baixo. Acerte o sal ao final. Desligue o fogo e deixe descansar por pelo menos meia hora para apurar os sabores.
